Organic bread rarely is BTW. Look at the label and it will say 'Organic Flower'. Nearly all bread has 'improvers' in the yeast and this means that the bread cannot be classified as organic, just the flower. Using 'improvers' in the yeast means that it rises much quicker, the bread soaks up more water and does not taste as good - it will be 'sticky' when chewed. Rising wheat intollerance (?celeric?) is linked with the artificial enzymes in the yeast that make bread cheaper and easier to mass produce.
