We get loin steaks rather than chops, we have them about once a month with boiled potatoes, green beans and gravy. And loads of mint sauce for the potatoes and beans, then I lick the plate.
Delia has a good recipe for this -- fry the chops in butter, then fry onions in the same pan, then apples in the same pan again (all that accumlated fatty goodness), into a dish, pour some cider over the top, and into the oven.
