If you cooked it yourself then I guess it's the mince which you're disappointed in. I've noticed frozen minced beef from supermarkets is basically fake-food, as it seems to be some kind of processed gunk forced through nozzles to make it look like it has a texture, but when defrosted has no texture again. I don't trust it. Better to stick to fresh mince.
Or maybe you referred to supermarket ready meals, or pre-made bolognese sauce in a can. I can't answer for those but I wouldn't be surprised if they've gone downhill. The supermarkets do seem to progressively degrade the quality of products, thinking (maybe correctly), that customers won't notice and will keep buying.
I have a theory that supermarkets are the most evil organisations on the planet, but it's unproven at this stage. I'd need to do an in-depth side by side comparison with the newspapers. Certainly any company who actively recruits so many fresh faced and irreproachable checkout operators and forces them to say hi to shoppers who would much rather be left alone to struggle with packing their over-priced meagre rations, must have something to hide.
