What's your favourite very simple veggie meal?

The meal I'm most prone to making is rice, with butter, kidney beans and lentils. Guramasala and chilli powder are added to the lentils whilst cooking. Another good receipe is mashed potatoes covered in butter and brocolli - now thats magic.

That sounds really nice....apart from the milk powder and the wholemeal toast
 
Pasta, fresh crushed garlic, chopped fresh parsley, butter or olive oil and a touch of dried chilli flakes.....I'm a carnivore but this is the dish that can wake me up with a craving.....

My favourite too for in the colder months :)

Also for a quick supper I get some vegeburgers and stack them in toasted sesame buns with onion, lettuce, tomato, cheese slices and loads of tomato ketchup and mustard. Even my carnivourous boyfriend loves them.
 
Take one casserole dish

layer of chopped onion (and garlic if wanted)
then one chopped courgette
layer of dried gnocchi (the vacpac ones you can get)
layer of chopped fresh tomato (with skin)
season with cayenne pepper
empty tin of chopped tomatoes over top and grind black pepper all over it

Put casserole lid on and bake til the gnocchis are soft

Remove lid and add a layer of cheese

Bake again until cheese bubbles and browns

Serve with salad

Grilled/roasted courgettes, peppers and red onions. Roasted/grilled corn on the cob with green beans. Roast root veg with garlic and rosemary. Grilled tomatoes on toast with olive oil and basil, that sort of thing.
Just ate kebabs, with halloumi cheese marinaded in olive oil and lemon juice, with lemon thyme. Stuck on the kebab with green peppers, courgette, and onion. Lush. Ta, Ms Pembrokestephen.

Alternatively, cauiliflower cheese and skinny mashed spuds. Yum.

Or curry.

I've got all those ingredients apart from gnocchi. Would it work with pasta instead?
 
I made the above recipe with pasta shells instead of gnocchi. I added some olive oil and some extra water for the pasta. Turned out great, a bit like ratatouille. :)
 
Stir-fried cabbage and onion, can of chick peas, soy sauce, tahini, chutney ... plus of course anything else you happen to have lying around. Every kitchen should have a sprouter :-

Necessity is the mother of invention!

I worked out that it cost me about £3 and I got three big meals from it. Course, it would have been even cheaper if I'd made the gnocchi myself but too much effort :o
