What's your favourite thing that isn't meat? (The Veggie Option)

I'd eat swede every day given the chance.

I think I like everything except beetroot and maybe cabbage (though red and white cabbage are great).
 
Roasted brocolli and asparagus with garlic and thyme.

Also the not-so-humble roast spud You can't beat them, especially if they're crispy on the outside and flurffy in the middle. That's the way I cook 'em.

You eaten raw courgette? Great sliced very thin and served with lemon juice, olive oil and fresh mint.
