It tasted nice but the texture was all stringy and dry, a bit like turkey but only far more stringy. I just ate the skin and the marinade, I don't think tp was that fussed on it either.

Swans are hard. i heard that when they hit you with their wingbeat it breaks the speed-of-light barrier and their wing flies aroundt the other side of the world and chops your head off.

anyone remember the feast in Porterhouse Blue?
The menu was Caviar, Soupe al'Oignon, Turbot au Champagne and Swan stuffed with Widgeon :cool:
and they somehow put all the feathers back on the swan before serving it

I wouldn't advise eating anything that's been on the River Lee, fish or foul or otherwise. It's very polluted and there are also loads of weird parasites in the water.
 
We ate it years ago and sucked on its bones. Swan Jerk is quite the thing, pity they're going to flatten hackney marshes :(
