Can't remember where I saw it online but someone asked on a forum what to do with a glut of zucchini and someone else replied, 'throw them into traffic.'
I'm finding I can't digest them raw this year when previously I was ok. Maybe it's the variety. I've quite enjoyed them spiralised and raw in previous years. Battered is a good call though.
Cooking courgette with stuff is usually a mistake imo because it just soaks up any liquid or oil and goes soggy. Hot almost dry pan, under the grill or on a barbecue or other flamey type setup are the best ways.
I needed a change from stew tonight so I sautéed them with onion, tomatoes, mushrooms and mung sprouts ... they ended up in a pool of liquid, but less so than if I had actually boiled them - chucked in a can of chickpeas...
