What can I make with spinach?

Ingredients:

1 tin of chickpeas
Spinach (fresh or frozen)
I large onion roughly chopped
French beans (and peas if wanted)
Mushrooms
I large tin of chopped tomatoes
Tomato puree (2 dessert spoons)
Chili powder (½ to 1 tsp)
Medium curry powder (2-3 heaped tsps)
Cumin seeds (2 tsp)
Garam masala (1 dessert spoon)
Oil

Method:

Heat oil and cook onion and cumin seeds for approx 5 minutes. (If using frozen spinach add at this point and put a lid over the pan until it defrosts.) Add mushrooms and cook for a further 3 minutes. Separately fry chili and curry powder then add the tomato puree and stir well. Add to main pan and then add the tomatoes, then beans (and peas if using). Add the garam masala and simmer for about 15 minutes. If using fresh spinach, add this about 5 minutes before the curry is finished.

Serve with pitta/spiced rice.
 
But what about the prawns, VP? WHAT ABOUT THE PRAWNS?

spanakopita: wash and wilt/cook the spinach (loads of it, it'll shrink down to nothing) and let it cool. Squeeze out any excess liquid, chop, and combine with crumbled feta cheese, an egg or 2, nutmeg, black pepper, salt; you can also add chopped dill or parsley if you like.

put a bit of this filling in the centre of a filo pastry sheet and wrap up - you can either make a megaspanakopitta, building it up in a baking tin like a lasagne (plenty of filo layers brushed with butter, then the filling, then plenty more filo + butter), or you can make individual ones, rolling them up like spring rolls or folding into samosa-like triangles, or folding them into small square packages. Whichever way you wrap the filling, be sure to paint the filo pastry with plenty of melted butter between layers.

Bake in medium-hot oven (about 200C ish?) until the pastry's lightly browned, leave to cool, youre done.

It's alright, I had a prawn sandwich for lunch, I don't want more prawns for tea.

Thing is, I don't think I want spinach anymore either :(
 
What about a dip?
Grab 250 ml of fat free mayo
450 ml of sour lite cream
pkt of french onion soup
200-250g of spinach
large round loaf(we call them"cob" loaves,yanks call them a"one pound round"

Chop up spinach,mix in with mayo,cream and dry soup mix.Put in fridge for 6 hours.Scoop bread out of loaf,fill up with mixture,use scooped out bread to dip as well as the crust of the loaf.

It's like an eggy, cheesey spinach lasagne but with filo rather than pasta.

Sorry I didn't post up the recipe earlier, I nipped out up to my allotment to discover somethings been munching at our spinach before I've had the chance! :mad:
 
1 kg spinaches cut small and thin
2 bunches of cilantro
pressed garlic
salt
olive oil
cumin powder
paprika
lemon juice (or lemon confit)

it must shrink very slowly becoming brown and more compact, maybe 2 hours ; is served cold as antipasti
 
I really fancy a load of spinach for tea, but am lacking inspiration as to what to make with it. It needs to be fairly healthy, so large amounts of cream, butter or cheese are out.

Suggestions?

What we call in our house Snottage Pie. :)

Basically Cottage pie with spinach mixed into the mashed potato top super yummy:)
 
This recepie rocks. Really fresh tasting Saag Paneer. Loads better than any I've ever had at a resturant

Ingreedents

1/3 to 1/2 bulb garlic
Ginger. Wallnut size or smaller
Chillies. Not strong. I use green fat ones with seeds taken out - 4 is about right
2 - 3 Onions
Spinach (fill the wok to the top with it)
Paneer. Block, in money about £1.50 - £2.00 worth.
1 tomato, maybe
Nan bread. Heated with butter for extra yum

How to


Chop / fry Ginger / Chilli
Add chopped onions
Add chopped / crushed garlic
Optionally pre fry paneer so slightly brown and add now or just add 'raw' now (2cm chunks)
Right at the end add spinach and optional chopped tomato
Maybe a little mild red chilli powder for colour

No additional anything required. Every flavour can be identified in this dish and they go together very well. I recon paneer cheese is fairly healthy.
