What can I bake?

Avocado, white chocolate and wasabi sponge, well actually petit four would be better. Just go easy on the wasabi and you might thank me.

I know you're all on the edge of your seats, so I'm pleased to report my lemon curd cupcakes were a friggin TRIUMPH
I think it was because I got Gales lemon curd which is weirdly gelatinous and not much like lemon curd at all (a complete fluke btw, I only got it because it was the cheapest and I couldn't be arsed making my own).
If anyone wants the recipe I'll write it up as soon as I've finished stuffing my little piggy face

Screw you all  I'm gonna give you this recipe whether you like it or not

220g self raising flour
1/2 cup flavourless oil (I used oil because I wanted them to be extra moist, but you could definitely use butter for more flavour)
3/4 cup buttermilk
1 large egg
Lemon jest and a little squeeze of lemon juice, until I realised it might make the buttermilk curdle
100-150g white chocolate, smashed into little chunks (or nuts or berries or whatever)
Gale's weird gelatinous lemon curd

Preheat oven 180c

Mix all the dry ingredients (not the chocolate) in a bowl

Mix all the wet ingredients in a jug

Combine the two, and don't overmix

Add chocolate

Put a spoon of mixture into a muffin case, then a teaspoon of lemon curd, and cover it up with more cake mixture

Bake for about 20 mins.

YUMMMM!

Got this in the Borders on Oxford Street which is closing down for £1:

One birthday banoffie pie coming for Mrs Ringo.
Ooooh, have they closed now? Will someone trek to Oxford Street for me?

i'm jealous on 2 fronts: I loves a good cooking book, me.
Also a friend promised me loads of cans of condensed milk which i was going to make a banoffee pie with but they never materialised, lucky ms ringo!
Use dulce de leche instead ;)
I went out to a friend's house over the weekend for a barbecue.

For dessert they served Red Velvet Cake which looked very impressive.
Oooh, I made them the other week, then a character in the book I was reading made one :hmm:

I'd have to cut it in half and then eat it :hmm:
Yes... pics please :)

i dont want to make a banoffee pie, but i was offered the ingredients so i had mentally ear marked it.

pip, did the cake taste funny with all that lemon jest? *gets coat*

i've just been making sunflowers from sugar paste and could do with a cup of tea and one of your buns :)

Had never made one before, I'm not the most proficient pudding maker, but it turned out perfectly and actually looked like a professional job.

She was ecstatic and cried :)

BTW BiddlyBee I think Borders is still open, if I get back down there I'll grab one. Everything in it looks good.

I'm on an economy drive, so tomorrow I'm going to make bran and oat muffins I can have for breakfast.
Meh.
