i have on in my cranks bible, but i can't find it online, but there are some nice looking recipes if you google it - the one on bbc good food looks nice.

Oh fuck yeah. Pinto beans make for really nice refried beans. They carry the flavour of the cumin really well. And they don't need tomatoes added.

No tomatoes and no (beefy) stock sounds like a disappointing chilli

I reckon your best hope is dried beans - the soaking liquid will add a little colour and extra flavour. 'Traditional' Texmex style chilli should be a cuminy meaty blend cooked slowly into a reassuring thick sauce imo. I prefer my veggie chilli to be lighter, cleaner mix of coriander, chillis and and black beans with that in mind
