Veggie BBQ Ideas

Halloumi is made for bbqing!

I like tofu marintated in lemon and garlic and then chucked on a kebab with mushroom and bayleafs.
 
I prefer paneer to haloumi, it's less salty and less rubbery but still holds together when you cook it.

Paneer tikka kebabs.
Mix together your own spices* (or get a packet of tikka masala mix) with some yoghurt and marinade the paneer and veg for a few hours or overnight :)

* You could get the marinade in a jar I suppose, but it is so easy to do it's not worth it imo

Griddled sweet potato
serves 8

3tbsp olive oil
1tsp chilli powder
4tbsp chopped corriander
1kg/2lb 40z sweet potatoes thickly sliced


1. Mix together oil, chilli anf half the corriander in a bowl. add the sweet potato slices, season then toss to coat the oil.

2. Cook for 20 minutes on the BBQ, turning occasionally until tender

3. transfer to a dish and scatter with remaining corriander



Marinated mushroom melts;
serves 4
150ml/1/4 pint olive oil
2tbsp chopped rosemary
4tbsp chopped parsley
2 garluc cloves crushed
16 large mushrooms, stalks removed
8 large spinach leaves, tough stalks removed
140gms/5oz mozzarella, cut into small cubes
4tbsp sundried tomato paste

1. mix together the oil, herbs, garlic in a large bowl, then season well. add the mushrooms, coat in the flavoured oil, then set aside to marinate for 30minutes.

2. lay a leaf spinach on a chopping board. Place some of the cheese in the centre, season with pepper, then wrap the leaf around it to form a parcel. continue with the remaining leaves to make 8 parcels.

3. Spread a little of the sundried paste on the inside of each mushroom. Place a wrapped piece of cheese in 8 of the mushroom cups, then top each with another mushroom. Push skewers through the centres to hold them together. Cook on the BBQ for 5-10 mins each side, brushing with leftover marinade as you turn.
 
Saw a recipe the other day that looked good.

Slice aubergine into slices lengthwise. Oil them then cook them (oven, grill, frying pan, griddle, bbq if it's lit, however really) until they're soft-ish. Then place a slice of feta/mozzarella/whatever, some basil and some chopped sun-dried tomatoes (or whatever else takes your fancy really) on the slices, wrap them up, secure with a cocktail stick, them finish them off on the bbq until the cheese inside is soft and melty.

Gonna try these out on some veggie friends this weekend.

Can't remember where I saw the bleedin recipe though.

Hoard vege kebabz - get your skewers ready, first piece a small thin cube of butternut squash, next piece a whole mushroom, followed by a piece of Halloumi, then a piece of red pepper, repeat this combo for the remainder of the skewer.

Then get a bowl and pour some Olive oil in (not extra virgin) add a small half teaspoon of the following, chillipowder/corriander/cumin/salt, then add two crushed cloes of garlic, stir all of this up in the bowl til it goes a muddy browny sorta colour then rub the spiced oil into the kebabs and stick em on the barby, keep a close eye on em and keep on the move.
 
well you were right about the BNS and I didn't do the pancake on a stick thing, but am this weekend :D

Did these last weekend. They worked well, and were really tasty. Although the BBC recipe just says to salt the aubergine slices before you roll them up, but I oiled and grilled them first, otherwise I don't reckon they'd be floppy enough.
