Vegetarians: what do you have as the centrepiece of your Sunday roast?

Rose Elliot did that tasty-sounding chestnut and red wine en croute recipe as well, didn't she? Still haven't got round to making that...maybe November is the time :cool:
 
Chestnut en croute is fab. Had it at the veggie restaurant in Walsall before it closed down :( was a lovely place that.
 
I never have anything, just everything bar the meat...i was happy with that until i saw some of the ideas here...now this sunday will be different :rolleyes: :)
 
Sometimes I make a proper raised pie with root veg and chestnuts, but this weekend we're having stuffed cabbage - lovely Savoy leaves rolled around a risotto-type filling, baked in a tomato sauce with crumbs and (veggie) parmesan on top. Also like Melanzane Parmigiana (see recipe wiki)

Try a roasted field mushroom.:cool:

Strangely, nothing. I do veggie toad-in-the-hole and cauli cheese with some nice onion veggie gravy etc etc.

The longer I do this veggie thing the more meat seems unappealing, although bacon, fillet steak and king prawns still make me drool. I have to go to a christening tomorrow and there's a "warm buffet". Which I suspect is going to be roasts... looks like I'll just have to stick to the sweets :D

A lentil & cider loaf usually goes down well for me; been doing it for years, though can't remember where I got the original recipe from. Warning: does contain nuts, but much more variety than a nut roast.

Lentil and cyder loaf
175g [6oz] red lentils
425ml [15 fl oz] dry cyder
butter and breadcrumbs for lining tin
1 large onion
1 carrot
1 garlic clove
25g [10z] butter
tsp herbs
50g [2oz] nuts [could be hazlnuts, walnuts, cashews etc; roasted if desired], chopped
50g [2oz] cheese
1 egg
salt and pepper.

Pre-heat oven to 180˚C.
Gently cook lentils and finely chopped carrots in cyder [c20 minutes].
Line baking tin with butter and breadcrumbs
Sauté onion and garlic.
Mix all ingredients together.
Add to tin, smooth surface and cover with foil.

Bake for c1 hour.
Turn out onto plate so breadcrumbs are on top...:)
