The only thing I've seen is what they call 'mock duck' in Banana Leaf in Clapham. Sounds good, but in reality its just some sort of weirdness with a similar texture to tofu which they've coloured and fashioned into the shape of strips of duck meat.
sounds like they're doin it rong then. there's a place on borough hi st that does it (as well as actual meat)and one on holloway road that is just veggie, both of them are great. this recipe works on the back of the beancurd sheet magically transmogrifying into something almost indistinguishable from duck crackling when it hits hot fat.
phase 2 is now complete in all it's nomtastic glory. made with seitan it is a bit better but not a great deal... phase 3 will be with bamboo and seitan and will take place next week- with some real urbanz to judge it too.
