Vegetable pie-recipes please?

Leek and potato will forever be a soup to me.

And a very good one too.

Seems closest to the one my mum used to make, though she managed to get chopped boiled eggs and parsley into the topping somehow.

The potatoes need to keep an 'al dente' texture somehow; if you can pull it off, fantastic.

I did leek and grilled red pepper with a saffron sauce and a puff pastry topping the other week

edit: the sauce was just a white sauce with saffron in it

I dont do pastry It has to be bought... and I left the pie dish at the parents

Never mind

It'll have to be the lasagne dish instead

The pie was cooked tonight.
It was great; a mix of rich lentil stew, leeks and steamed caulifower.With added cheese.
