A rollercoaster today...

Lunch - Garlic brussel sprout and potato roast - not an award winner, but filling and tasted good - forget to add the flaxseed.

Evening - Sesame seed burger - looked fucking scary in the oven... was scary.
 
Mixing up silken tofu with crumbled firm
You don't really need to store it in water I don't think. If you don't it drains itself quite a bit. My tofu scramble is always a little bit runnier with the first bit off the block, but not desperately so. Here is my personal recipe:

Melt big chunk of nice vegan marge (because after all you're compensating for the fat in the eggs as well as the fat you cook in)
Lightly sizzle a good grinding of black pepper and a teeny pinch of turmeric.
Add tofu, smoked salt, break it up and give it a minute or two to cook.
Voila.

It doesn't need more flavouring than that - even the smoked salt is an added bonus. I haven't explored Cauldron tofu etc, I get one of the Japanesey ones from the "World foods" section of the supermarket.

It's a bit of a faff - but combining silken and crumbled firm tofu (half and half) results in a great consistency for scrambled tofu...
 
Tbh if I'd done a little research I would have found that there are lots of things you can do with broccoli stalks/stems - the outer layer is quite tough but the inner part is perfectly edible, and you can roast, fry, make soup etc etc. It's just not going to be cookable in the exact same way as the florets.

I am going to buy some more broccoli and try it out.
 
I am generally feeling very well and feel more positive then I have I'm years. I am also a lot less tired at the end of my shifts. Several people have also mentioned that I'm looking really well and have lost weight. I feel that this change in diet is a small part of me properly taking care of myself. I've also stopped smoking (I smoked very little, like one a day) but I'm struggling with that especially after work when the psychological craving and wanting a reward for working hard are at its strongest.

I now shit 2-3 times a day :)

I found lollipops really helped with that psychological craving. Bit of a wierd one. Something to do with my hands and that helped. After being vegan for a while I stopped craving sugar the same. Figured was just cuz blood sugar was more stable overall like. But at first it really helped.
 
I haven't lost a huge amount of weight on it which is not surprising as my diet was already fairly plant based and I cooked for myself most of the time. My problem with consumption has generally been less the food and more the beer.

A friend of mine who went vegan a little before the new year has lost a massive amount of weight. I haven't asked her how much exactly but it's noticeable and people have remarked on it.

I don't think it's an intrinsically healthy mode of eating - you could eat like shit as a vegan - but it's also perfectly capable of being healthy, and the sheer fact of modifying your diet means that you have to consciously look at what it is that you're eating already and pay attention to what you choose. That in itself can make a huge amount of difference I think - it can break you out of bad dietary habits.
 
Also yesterday I made a pasta sauce with sprouts and it wasn't bad tbh but not perfect. I had to add a tiny bit of sugar to it because with the sprouts plus tomatoes it was quite bitter/sour. I'd prefer to balance that out with another veg, I'm just not sure what right now - maybe peppers.

I'm convinced tinned tomatoes have got more sour than they used to be. I often find myself adding a tiny pinch of sugar to tomatoey things now.

Normally I cook with the sainsbury's normal chopped tomatoes and they're ok, fairly well balanced. This time I was using value tinned (whole) tomatoes and they were definitely more sour than I was used to.

Half a teaspoon of sugar isn't going to make any nutritional difference but it's kind of annoying to have to add stuff to make something edible.
 
I'm going to keep going with the vegan diet as really happy with it for now and it does not feel like more effort also it was not much of a leap as I've always eaten this way but also had meat and fish and dairy too.

However I'm not labeling myself. I don't think I can be a proper vegan simply because I don't think there is anything wrong with eating animals or their products, but I don't like the cruelty of mainstream farming.

You can also add a teaspoon of dried yeast to it to take away some of the acidity. I discovered that by accident when I followed a pasta sauce recipe that used yeast for flavouring.

Is that just baking yeast, not nutritional yeast? I have some of the latter I've been putting pinches of into things, it's nice.

That's one of the main things I've got out of Veganuary.

All in all, on the positives, I've learnt some new recipes and ingredients, done some excellent vegan curries, I've appreciated my food far more, I've ate loads more fruit and more veg, I've not been hungry at all, I had some excellent vegan takeaway and eat-out food. I've also discovered that I've not missed meat and fish much at all, and cheese, milk and eggs far less than I expected...

The neutrals - I haven't felt energised or particularly healthier, or lost any weight..

I still haven't sussed out the bread problem or really found a decent regular breakfast. I expect though that these could easily be solved with abit of effort.

I can't honestly say I'll be keeping it up for now... apart from anything I've still got loads of non-vegan food in the house.... but I'll definitely be looking to cook more vegan stuff and choose more non-meat and dairy alternatives..
 
Kfc have got a special offer in the new vegan burger today. It is 1.99. Popped in on me way back from the big asda because it is just across the way. Its pretty decent tbf. Tastes like that kfc flavour and also a bit dirty. Overall like a solid 6/10. Probably be a 8.5/10 if pished. Not quite good enough to justify the usual price tag if a fiver with a drunk though. Also kfc is minging as fuck really so probably wont buy again but was glad to try it.
