Veg curry - little help please.

Yeh, when I first started doing veggie curries, it was all slop-in-a-pan. I like to think I've got a handle on them now

Potato and spinach curry - piece of piss to make, if you want the recipe for the future, gis a shout and I'll pm it

See also, chickpea and potato curry, and like others have said, aubergine and anything (because aubergine is fucking stonking in a curry:cool:)

Oh, pea and potato curry is another good un, which I also have a recipe for, and which I managed to royally fuck up the first time I made it by religiously following the recipe (and not boiling the spuds before putting them in the yoghurt) :mad::D

my potato and spinach curry is called aloo palak though (what I c+pd off the net, it's the only one I know)

how come?
 
palak is simply a type of saag. Saags can be spinach or mustard, palaks only spinach. Over here they are both always spinach
 
be very very wary of okra tho, soooo easy to fuck up n make disgusting.

Yep, buy fresh ones that 'snap' (not that easy in a supermarket where they tend to be kept past their optimum, not that popular) and don't overcook.

Peppers are nice but they don't really belong in a curry, do they? Mushrooms, aubergine, potato, cauliflower, courgette, brocolli are all good.
 
Well after all I did not end up cooking anything last night. Me lady got stuck at parents evening bombarded with questions about her darling classes.

Going to make a few of the dishes mentioned in the thread tonight though. Looking forward to it :)

Not really, I work with a few Indians who are strict vegetarians and veggi curry is a staple for them (in fact I'm working with one of them for 6 weeks soon so it'll be a staple for me too, with a bit of luck) :D
