1. Turn on 'show hidden files' in Windows Explorer (it's in Tools, Folder Options)
2. Turn on 'copy to iTunes music folder when adding to library' and 'Keep itunes folder organised' (they're in the 'advanced' tab in preferences
3. Plug you ipod in and you should see a folder on it called 'iPod_Control'
4. Drag that folder onto the itunes window - all the music should start copying over.

This method doesn't work with the iphone. Not sure what you should do, it's outside my knowledge. Try haveing a root around at www.ilounge.com
