The Ultimate Homemade Burger Thread

Bacon and finely diced gherkin works well. As does sticking chillis in, obviously. Those are my two favourite variations, but I like a nice herby burger too.

Yes. I do like some chopped jalapeño peppers in mine.
 
I don't think burgers should contain anything other than minced meat, salt and pepper.
 
I added some left over stir-fry vegetables into the burger mix once and it was the best burger I've ever had by quite a long way.
 
For my "good quality steak mince" burger recipe (as opposed to my "cheap mince chilli burger" recipe), I now use very gently fried & cooled caramelised shallots. Cooked with butter at the lowest possible heat, then cooled. I add that to the steak mince. Adds a nice little bit of sweetness.

As with sausages, I find they actually benefit from some filler (eg breadcrumbs). Above 80% meat and they just don't taste like they should. IIRC Heston found exactly the same thing when making hsi 'ultimate banger' episode.
 
burger meat, onion, garlic, and teriyaki sauce hits the spot for me! They can fall apart a bit if you are not careful, but served with some salad, bacon, cheese, grilled pineapple, and mayonnaise in a toasted sesame bun are nearly perfect.
