The best I've ever had is Buffalo sausage with Apple stuffing.
I used to be a vegetarian and you still can't convice me that anything that contains spinich and ricotta could be confused with something called a "sausage."
Having said that, I might try making my own one of these days. The hippie indoors likes then on a plate of breakfast, so it's probably worth a bit of an experiment.
My mum has this weird contraption for making sausages. She usually makes goa sausages in them, but has made normal ones in them. I remember them being quite tasty. Biggles in marylebone do really really nice sausages. And they're about the same price as the expensive supermarket ones.
