Spare ribs

I recently tried this recipe for gorgeous sticky spare ribs:

1kg Ribs
4 Cloves garlic crushed
1 Tbls Grated Ginger
2-3 Tbls Honey
3-4 Tbls Hoi-sin sauce
1 Tbls Soy Sauce
Enough water to cover ribs

Add all the ingredients and boil, as the liquid reduces and starts to thicken lower the heat until you have a thick sticky sauce. Ribs can be served immediatly or stuck on a barbeque to smoke a little.

Gonna be having a barbeque and found a nice little shop that sold me 1/2 a ton of ribs for a reasonable price but I was wondering does anyone else have any rib recipes for a bit of variety?
 
marinate your ribs for a day or two in green chilli,garlic onion&a bit of sugar.then slow roast with fresh chiilli etc. and a good bit of salt&pepper.
This works best with the leaner bacon ribs

why are they spare tho? I never got that - they plainly arn't spare. If a beggar asked you in the streets if you had any spare ribs you would think he was a weirdo.
 
You got me wondering so I looked it up and found a couple of explanations:

The word 'spareribs' is an English alteration
of the German 'ribbesper' which refers to the idea of pork ribs roasted on a spear.

There is also the "absence of fat" which, in 1596, the usuage of 'spare' came about in association to pork ribs.

My recipe is the similar to yours - equal spoonsful of soy sauce and sugar, a lump of ginger, some chunks of onion, water to cover. Boil until right.

Or, grind garlic, ginger and onion to a paste, add equal amounts of soy sauce and lemon juice, some ground coriander, chili, a taste of sugar. Rub into ribs and leave as long as possible - overnight is good but I'm not usually that well organised - bake in a hottish oven until right, turn once. You could grill them too I guess.

I use trimmed slices of belly pork for both these recipes - our butcher never has spare ribs.

You must be eating them in the wrong place!

our local chinese does honey ribs and they are LUSH! they fall apart in your mouth. delicious.

My recipes is:

2 - 3 tablespoons of honey
2 teaspoon soy sauce
1 chopped red chilli
1 tablespoon of oyster sauce
4 star anise
2 cloves chopped garlic
pinch of sea salt and freshly ground pepper


Mix together and marinate the ribs overnight. Bung in the over at 180 until done to your liking.

Enjoy :)

-Realise they are sinfully grotesque and probably jack russell spare ribs or the like
