Something light to cook

How about something ridiculously easy and quick like peppers/courgette topped with feta and grilled...?
A few leaves on the side, sorted.

I usually find that salmon or fish makes a really nice light meal but is also filling.

Preheat oven to 160, Take your salmon and lay it on some grease proof paper, then put whatever you like on the salmon to give it flavour:

Try: Corriander, lemon, ginger, chilli (a bit), salt pepper. Or: Lemon, Dill, Peppers, Salt, Pepper. Or whatever you think would be nice.

Wrap the salon up with all the ingredients in it but lifting up the two ends of the paper, bring them together in the middle above the salmon, and then fold it down a few times. It will make it easier to open at the end. Bung it in the oven for about 15-20 mins

You could make wilted spinach, or a salad to go with it. Or noodles, or rice.

That sounds nice - but two things: 1) no way is it filling! You're talking to me now - I eat for 2! 2) having discovered the delights of the griddle pan, I would never ever cook salmon in parcels again. But I would use the ingredients for another type of fish :)
 
Spaghetti with prawns, chilli and rocket.

Dead easy - fry some sliced spring onions in olive oil with some chilli flakes (I used two crushed hot chillis) and garlic. Add cooked prawns and a tub of semi-dried tomatoes in oil. Heat gently until warmed through, then add a glug of white wine or vermouth. Allow it to bubble up and reduce a bit, then add rocket and cook briefly until wilted. Toss with pasta and a bit of parsley, if you've got some (I didn't bother, but added a bit more rocket instead).

I always make too much pasta - it's something I have tried like buggery to correct about my cooking, but I just can't help it. And too much pasta = sleepy sojourner+full belly, which is what I'm trying to avoid :)

I'm really strict about measuring it out now, having had that problem in the past.
 
I was thinking along similar lines to this...with a sea bass fillet, but wasn't sure if I'd be able to get some dill

To all the egg suggestions - Annierak loathes egg, so unfortunately I can't use them :(

I've settled on doing a stirfry - a bit boring I know, but it's quick, easy, I can get all the ingredients easily, and I can't fuck it up if I'm sloshed :D

Why don't you point her towards this thread and let her choose? :D
 
How about something like Nigella's/Slater's chorizo and potato mix-up? Cook off some chunks of decent chorizo (semi-dried preferably) into a oven-ready frying pan and cook off. Add some sherry/wine/marsala into the pan and reduce, followed by some stock and some smallish new potatoes, halved if necessary. Bring to boil swiftly and then throw in a oven (180degrees ish) for around 30-45 minutes. Throw over loads of fresh coriander and eat with hunks of bread.

Bay leaves and onions optional...

Ah, she hates garlicky sausagey meat too. Apart from that and the eggs though she'll eat anything. Thank christ.

You could do some veal or chicken, hammered out so it's really thin, then fry. Squeeze a bit of lemon on it while it's frying. Slice, and serve in a salad with a light lemon dressing.

The chicken sounds....boring. Sorry mate!
 
Lebanese would be good; tabbouleh, falafel, little cubes of spicy potato, moutabel (grilled aubergine with sesame paste and lemon juice), foul moudamas (broad beans, tomatoe and garlic), cous cous.

IIRC Veal isn't produced using those crates anymore, and I'd say it's no more cruel than any other mass produced meat.

As for boring, that depends on what sort of salad you do. As long as you're not just using lettuce and tomato, it would be tasty. Think cous cous mixed with lentils, maybe with some coriander. With a raita on the side.

I don't eat mass produced meat, full stop. Okay, maybe the odd carton of mince :D Nah, seriously, I hardly eat meat - if I do, I go for free range etc

I'm not a fan of lemon, it has to be said. The salad sounds good though :)
