Serrano Ham Leg

Don't have Serrano here instead we have Presunto , broadly same technique ie air dried . However here the most prized is the leg of the black pig fed on acorns and aged. Not cheap as you can see .

My former Spanish in laws always had a leg at Christmas time.
I didn't expect to like it but actually it is very nice.
 
Dang I really want a jamón now. Got a knife but no wooden jamonero stand thing.... ooo the temptation.

Serrano is actually mid level quality btw. Often very good though. Top quality is pata nega... as in the pic above (presuno is totally the same I think!) with the black hoof from scoffing lots of acorns.
 
I just see a whole leg as fabulous for a few days and then just being a pain in the arse.

Why? It lasts for months. You can also slice it and then get it vaccum packed or maybe even freeze it. You can use the less attractive bits as little chunks to cook with. And finally, when you've cut off as much as you can without slashing your arm open (be fucking careful cutting it!) you can get a bone saw and chop it into chunks which then make amazing stock and are great for cooking with.... the remaining ham meat comes off the bone and there's so much flavour to it! Or you could just leave the leg sticking out of your bin, a sad but regular sight all over Spain.

Top tip - foreleg (paleta) is not quite as good as backleg (jamon) but it's significantly cheaper, so you can get a real bargain with an iberico/pata negra paleta, particularly if you aim to cook with it a lot.

My word, they've got some fabulous looking grub on that website. Unfortunately it seems they don't ship to the UK.

Are you coming back any time soon? If so can I put an order in???
 
Ok ive decided since I still have a fair amount in euros from working in Spain (plus I spent last christmas ill drinking food through a straw) Im gonna do a jamón order online from a Spanish website that specialises in shipping internationally. Gastronomicspain - free shipping if you spend over 90€.

Getting a 7.5kg reserva jamón serrano leg for like £70, some sobrasada, panceta and chorizo.. as you do! I was semi tempted by the supermarket offers... £60 at Sainsburys for a serrano leg but not available currently. Not is the one at M&S. Tesco does a de-boned 3kg piece in a stand for like £30. And then theres risking it at Lidl (I cant be bothered).

Yummm! They are an excellent deal the Lidl ones.

Dont let jamon dry out is the main thing... use the slices and chunks of skin/fat to create a little lid that goes back onto the open part. then use a kitchen towl or the bag it comes in or something like that on top to keep it fresh.

Well I've cut into 3 and frozen 2/3's the boneless joint I got. Made a token start on the remaining 1/3... won't be repeating any time soon. As with a lot of things I find the idea is far more appealing than the actuality... shame really
