Serrano Ham Leg

I bought one of those. The knife is good but not flexible or long enough for the fine slicing you need to do.

Being the only meat eater in the house meant that after 6 weeks I'd had enough. I reluctantly threw the rest away.

It's a preserved meat, it will keep for months and months even if it dries out. Top tip is to cut a big long thick top slice of skin/fat off when youre opening it up, then keep that to cover the open part. Aim to only cut from this part until you get to the bone, only then move on to other parts, so you minimise air exposure. You do really need a good knife and stand though.

If you do get to that half-way tired stage, grab a hacksaw and chop it into pieces. Loads of Spanish people do this, especially with pata negra.. at least traditionally anyway (sad sight when you see the trotter of a whole leg sticking outa a restaurant bin in Spain). The bone and remaining ham make amazing stock or can just be added to pretty much any stew or soup for amazing salty flavour and chunks of cooked jamon flesh as it falls off the bone.

I might well buy one of these m&s ones, havent had a whole leg for a few years. There's fun in the danger though.
