Spot on, gears left foot, clutch left hand (usually anyway) - it's all about the revs...
Something that really helped me (I always struggled to remember which was up and down when training) - when you're coming to a stop, you're pushing down on the gear pedal, as in to slow down. So as you're slowing, keep going down through the gears until you hit 1st, at 2/3mph pull the clutch in, once you've stopped give it a little kick UP into neutral. Then your left hand is free to fidget about while you hold the bike with either front or back brake.
To pull off, pull clutch in, push the gear DOWN into first, gentle revs and slowly release the clutch until you're comfy with the bite point. From then on it's toe under the gear lever and you're going UP through the gears, remember, speed up, gears up.
I found this out the hard way hitting 2nd at 60mph in my training, all was fine but it's a bit of a shock if you're not expecting it...
I'm sure they'll go through it all in training, it's a pain in the arse if you're not used to clutch control but after a while you forget all about it and it becomes second nature...
