Scones

My next door neighbour makes good scones which are:

8 oz SR flour
1 oz butter or marge rubbed in
2 oz sugar
1 egg
a drop of milk (enough to bind the mixture)
a drop of vanilla essence (optional)

These go in at gas mark 8 for 15 mins.

It was the first time I'd seen a recipe for scones using egg, but they do come out lighter.

Method A: too fast/easy to be good/true

1 cup self raising flour
1 cup grated cheese (I prefer Tasty)
2/3 cup milk
1 pinch salt

Preheat oven to very hot- 225 degrees C.
Mix flour, cheese, milk and salt together until combined.
The mixture is fairly moist and sticky.
Put about a rounded tablespoon of mixture onto a greased tray.
Makes 10- 12 scones approx

12 mins. They did not rise. But they made nice cheese biscuit things, or something like round cheese straws.

Method B: better

2 cups s/r flour
about 1/2 mars bar sized lump of butter, rubbed into flour and baking powder
Tablespoon of baking p[owder as I do not trust s/r flour
1 cup grated cheese
Salt & pepper
Cup of milk with egg beaten in
which is poured into a 'well' in the cheese/flour mix
kneaded quickly into dough
Rolled onto floury surface
cut into 15 scones
cooked on 220 for 16 mins

much more like it, but still not risen that much. Think I had too much cheese balanced on the top of the scones to weigh them down


Sorry, but I couldn't follow this recipe at all! I don't understand the 'cup' measurements!
 
Ooo I made fruit scones (scons) last weekend and they were super duper tall. I've got a recipe in one of my Reader's Digest books. I'll dig it out later and post it if you'd like.

General tips are:

Do sieve the flour, cream of tartar, bicarb and salt.

Don't handle the dough too much and don't roll it out too flat.

Choose a medium cutter and give it a good bang as you cut it.

There's a cheese scone recipe in there too which is also v good and there's no eggs.

I just used a mug, filled with a) SR flour b) cheese c) milk. It's merely a way of getting the quantities balanced....
 
I did it!!!!!!!!!!!

Well, these look alright and they taste pretty good too. :)

I used a recipe from an old book I got off the milkman but added a bit of bicarb to help them rise.
