could provide a good point of inspiration if you're not tomatoed out. Suggest cooking the steaks in a frying pan. In a separate pan fry an onion, cumin, tiny bit of ground coriander, perhaps cayenne or paprika, garlic. Add some of the pork fatty dripping. Add beans. Mix up a bit and cook for a little bit. Add a few roughly cut fresh toms or tin of toms, or random bottom of the fridge soft veg like peppers, your fennel, mushrooms etc. Serve steaks drizzled with mixture.
That looks just like what i was gonna do tomorrow!

Bit confused by this bit in the recipe:

Meanwhile shred and core the cabbage, blanch in hot water and refresh, before adding to the casserole.

:confused:
 
That's standard cooking-speak for blanch, then rinse immediately under a running cold tap. Helps keep the colour and crispness etc.
