Sauerkraut

I am going to Exeter for the pictures tonight so I’ll see where the Polish shops are if I have time
 
Disposing of my preserving jars I never actually used for pickling reminded me I am going to have to devote a lot of time to that in future.
If I end up living where I want to, I will have a longish drive or bus ride or use a passenger ferry to get food like that - but I will also want to maximise my veggie production.
And some of the the Polish pickles contain some weird things - like sugar and even saccharin ...

I find myself eating this quite a lot, about half a jar a day. Is there anything I can with it other than eat out of the jar?

Struggling to find a source for it locally though except for sainsburys, shops here don’t tend to have a world food aisle. Ideally I’d be buying from a European supermarket which would perhaps be cheaper and might have more interesting varieties.
You could do a stew/ soup with it, similar to the one post #78 above with or without the sausages. You say you’re avoiding carbs, does that include beans and pulses?
I just did a quick search and found this recipe. Sauerkraut and Bean Stew (Slovenian Jota) | Heartful Table
It has beans and potato, but only 2 medium potatoes for ‘serves 4’ you so you could use less or none.

I tried it once but found it too salty - perhaps it doesn't work with my understated veggy food ?
Are you supposed to rinse it before use ?

That's generally my problem with British pickles. Mrs. Elswood is the only brand I've seen on the shelves without sugar or sweeteners. Some of the Polish ones do too, but it's easier to find one without in the Polish shop than it is in Sainsburys.

I've never heard of rinsing it (except in the modern slang sense maybe) but on the internet some people reckon you can rinse it if it's too salty while others say rinsing it removes probiotic content.

The shop stuff you buy in jars tends to be pasteurised, I wouldn'tve thought there'd be that much to remove.
