I like proper sauerkraut but I've always found those jars of sauerkraut completely rank.

I've little experience with Polish sauerkraut, but ime German sauerkraut is a good bit more sour than the stuff I had in Scandinavia. Ours also almost always came cumin flavoured.So is kapusta just Polish for sauerkraut and it's exactly the same thing or is there any difference?

The stuff I ate had whole seeds, but I can't imagine it'll make a massive difference.Whole cumin seeds or coarsely ground?
Kimchee is rarely just cabbage (usually cabbage and radish) and even when it is just cabbage it is heavily seasoned before the fermentation. Can't stand the stuff personally.I love kimchee, it's basically the same thing but red.

That sounds fantastic.My Mama taught me to wash it a little as it is otherwise too sour.
Fry an onion
Chop an apple
Add washed sauerkraut
Thumbs up to the bayleaf suggestion above

The jar you posted a picture of says it's pasteurised.I have no idea whether it's pasteurized or not. The info was all in polish. I assumed that it was just ordinary sauerkraut....not pasteurized.
