I'll have a go at a simple explanation.
You don't sail into the head wind. You sail diagonally so that you go forward but to the left and then forward to the right. Basically zig zagging your way forward.
Its a lot easier to just turn around and sale the other direction instead but not much use if thats in the wrong direction to where you need to get to
