I'm not feeling very inspired, so my dear urbanites, what shall I cook for his birthday dinner tonight? Bearing in mind I'll only have about 1 hour to prepare it.

We like a bit of meat! ;) (i.e. not vegetarians)

I'll be going to Tesco on the way to his place, so I should be able to get ingredients...

Lemon & garlic chicken breasts

hammer out the chicken breasts so they're at most, a centimetre thick
pour over lemon juice, crushed garlic, thyme and olive oil
cook very quickly in a hot griddle pan
Serve with a salad, some rice cooked in veg stock, sauteed potatoes, mash, linguine, or patatas bravas (depending on mood)

if you have any more than an hour and want steak, make some bearnaise sauce. I've posted my recipe for it somewhere on this forum already.

If you don't then serve topped with blue cheese and garlic butter.

Grilled, drizzled (:o ) with balsamic vinegar and shavings of parmesan cheese :)
 
I suggest a full-bodied red as accompanyment.(sp). Also ensure you have atleast 2 bottles handy, so you go go through that shared moment of indulgence when you decide to open the second bottle. :)

the key is in hammering out the chicken breast and cooking on a hot griddle pan. this ensures the chicken is cooked through while staying moist. If you have some white wine open, pour some of that into the pan after, cook off the alcohol/scrape the caramelised lemon/chicken stuff, season and pour (through a sieve) over the steaks. Or, after adding the white wine, add some cream.
 
Bacon chops crisped under the grill.
Creamy mashed potato with a pinch of nutmeg.
Fresh steamed asparagus and broad beans.
Parsley sauce

followed by.....

Sticky toffee pudding (the heinz tinned ones are really good!) and cream/custard

He got given it as a present years ago and it hasn't been used for as long as I've known him, perhaps I'll get it out tonight! :cool:

howsabout diced chicken breast marinaided in lemongrass and ginger, coated in foccacia breadcrumbs, served with kidney beans and butter beans in a sweet cider vinegar with chipped sweet potato

and ketchup
 
Speaking of asparagus, I had dinner at a friends recently and she made fish which was wrapped around asparagus then done in the oven. Apparently if you just wrap it around then put the folded bit facing the bottom of the pan - it seals together as it cooks and you can pull it out and cover with a yummy sauce ... looks sexy and quite easy to do.... Not sure if red meat would work with this, but worth mentioning for next time if you love asparagus.

Chilled Sancere White Wine (approx' £10)

Chicken breasts, wash and remove any unwantedness (fat) from chicken. mix up said lean fresh chicken breast, no need to marinade as such, with some season all, black pepper, lemon juice and tarragon.

Place in a baking dish on mid heat and scoop a few small knobs of butter onto the breasts... - prep' 15 mins

whilst it begins cooking prepare (already purchased)

Baby Leaf Spinach
3 cheeses (cheddar/leicester/smoked) - grated
slice and fan 1 avacado
black pepper
lemon juice
diced apple...

Lay a bed of baby leaf spinach and fan an avacado over it on a serving plate, squeeze a little lemon juice, sprinkle the diced apple and grated 3 cheese over it, cover in black pepper.

starter/side salad prepared - approx 15 mins.

check chicken and begin basting with melted butter combined with natural juices... do so every 5/10 mins so it wont dry out and soaks up all the flavour.

Boil some pasta... leave plain apart from black pepper and some other (whatever available) herbs/spices you have, allow to cool, cold pasta with dish above is mouth watering. - 15 mins

Check the chicken after about 30 mins, cutting one in half to see if it is cooked.

heat up some fresh french baguette (already purchased) and serve in a basket.

lay the table...

light a candle.

easy peasy... and beautiful too...
 
Tony, that sounds wonderful!

But I have to say I was half expecting a recipe involving spinach + milk when I first read 'Spinach'! :eek: :D

Nah, I wouldn't use a health grill, you'll lose all the tasty juices. Do it in a frying pan instead.
