Roasting vegetables....

juice a whole lime into a small bowl.
add equal amount of olive oil.
mix.

drizzle over vegetables (i use aubergines, shiitaki mushrooms, sweet peppers etc).
add lemon grass/mint. and a tint of oyster sauce (last 10 mins of cooking).

seal with foil and bung into oven for 30 to 40 mins on 200c.
 
Some nice fresh coriander adds a certain something to the mix, and a few chunks of celeriac taste interesting (although they are a bit of an effort to peel)
