Recommend a nachos recipe

Nachos and brussel sprouts

Kam made beautiful sliced and sautéed in butter sprouts once. I think there was quite a lot of garlic and panchetta in there too.

That would be lovely on nachos with the sour cream and cheese etc. :)

Mix up nachos, jalapenos, grated cheese (lots). Put under a hot grill until the cheese is melted. Then put tomato sauce, guacamole and full fat yoghurt on top/ side. Nom it.

You can. I like jalapeños with nachos and a fine layer amid the chips is good. Same goes for chilli if you want that but the salsa/guacamole/sour cream topping I prefer cold.

If you can't get the chips and cheese correct then the dish fails.

Microwave on LOW heat. If you want a decent amount of nachos with melted cheese on more that just the top layer then the grill won't cut it.
 
Is there anything better out there than dorritos? I'm not that keen on them. My local pub used :( to do nachos and I think they made the corn chips themselves. They were much nicer.

I use the shops own brand ones usually. Phileas Fogg ones always used to be good but not sure about now, I never see them.
 
there's a pub near us that uses crisps, thick cut, kettle chips, instead of nacho chips, and then all the usual toppings, nice alternative. Nachos should have massive amounts of cheese and lots of jalapenos imo. I had some good ones with a dryish mince chili with black beans, that was good.
 
I've got a craving for nachos but they never taste as good at home as they do in the pub/restaurant.

Make or get fresh salsa, and add some sort of hot topping whilst cooking the tortillas, topping and cheese. Add the salsa, guacamole, sour cream and halepenos after cooking the hot part in the middle of an oven on gas mark 4 until the outermost tortillas start to singe.
 
Good Refried beans recipe:

1 tin of Pinto or Kidney beans
1 small onion (finely chopped)
1 clove garlic (finely chopped)
1/2 tsp cumin seeds
1/2 tsp coriander seed
1/2 tsp paprika (hot)
1/4 tsp salt
2 tsp lime juice
2 tbsp olive oil

Method

  1. Heat olive oil in a small saucepan
  2. Add onions, garlic, cumin and coriander and fry gently for 2 mins
  3. Add beans and other ingredients
  4. Cook on low to med heat for about 5 to 10 mins
  5. Stir with wooden spoon until beans begin to disintegrate
  6. Voila - refried beans!

It's put me in the mood for some "South-of-the-Border" grub tonight as well - have got some ripe Naga Chillis to work with so will see if the missus and I can stand the heat!
