Re-heated chinese from last night.

I've heard that reheating rice can cause food poisoning. Is this true?

It's true that you could get food poisoning from eating reheated rice. But it's not actually the reheating that's the problem – it's the way the rice has been stored before reheating.

Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. When the rice is cooked, the spores can survive. Then, if the rice is left standing at room temperature, the spores will germinate into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea. Reheating the rice won't get rid of these toxins.

So, the longer cooked rice is left at room temperature, the more likely it is that bacteria, or the toxins they produce, could stop the rice being safe to eat.

It's best to serve rice when it has just been cooked. If that isn't possible, cool the rice as quickly as possible (ideally within one hour) and keep it in the fridge for no more than one day until reheating.

Remember that when you reheat any food, you should always check that it's steaming hot all the way through, and avoid reheating more than once.

oh i thought the dodginess would be leaving out at room temperature all day for loads of gribbly little bacteria to grow.

I live in a house on the NE coast with no heating. Believe me I don't worry about bacteria growing. I worry about icicles :p
Odds should have put the food away but at least it was covered:p

Thing is, you need to be able to keep the food below four degrees reliably to merely reduce the risk & there are a number of other potential contaminants that remain active at even fridge temps. One of which is particularly associated with ingredients used in Chinese cooking.

Depends on the particular bacteria - Depending on temprature & other factors, certain types can reach a toxic level in as little as four hours.
 
Then you have been bloody lucky - bad stuff aside, I & plenty of others (incl the Op it seems) have got on the wrong end of 2nd day takewaways before & the increased level of contaminents in modern ingredients makes it a particularly daft thing to do.
 
I'd do anything to minimise the risk of getting food poisoning again. Three weeks it took to clear up. The first 48 hours I couldn't leave the bathroom.
 
Brown people eat re-heated rice all the time and we're not all dead.

I'm aware of some fairly recent research into Bacillus Cereus & race-related variations in tolerance but do you really want to open that can of worms here?

They are also experementing with a prep made from it as an alternative to antibiotics, but again I don't think that is anywhere near human trials yet?

We are also currently doing research into rice, arsenic & related cancers & frankly, the first stage results are disturbing - Remember that there is no minimum safe level of exposure here.

Im OCD about food. I usually eat all my meals in a day, but my paranoia has cost me loads of leftovers, or past sellby which would prob have been ok.

And I've a phobia of vomiting :( I've always been careful cos of that so goodness knows what happened there ... but I really really wouldn't like to repeat the experience.

The difference is a bit like having proper flu compared to a bad cold.
