Puddings from the olden days

Im not even going to bother tbh, the two are different - as I said, if you think they're the same you've had a poor bread pudding.

I still make rice pudding and semolina on occasion - it's dead quick comfort food :)

I also like a good bread pudding or a bread & butter pudding, or a tea loaf for that matter (though I guess it's not so much of a pudding unless you pour custard over it).

and milk. and eggs. and dried fruit. and sugar
Bread pudding doesn't have eggs or milk. It has bread, dried fruit, sugar, spices and cold tea (no milk). You also mash it up between your fingers. Put it in the dish, cover with a sprinkle of sugar and bake gas mark 4 or 5.

With bread and butter pudding you butter bread on both sides (not too thickly). You lay one layer in the base of of a dish, sprinkle on some dried fruit, then another layer of buttered bread and so on till the dish is full. Then find a suitable corner and slowly and gently pour in eggs beaten with some milk. Sprinkle with sugar (which goes a bit like toffee if you thickly butter the top slices and sprinkle soft brown sugar on it). Put in the oven. Gas mark 4 or 5

i know how to make 'em! the recipe i have has milk and eggs though. it still has the mashing betwixt fingers and whatnot though...

Oooh no. strong black cold tea. Can't be beat in a bread pudding...except..... little tip. I sometimes put a couple of dollops of thick cut dark marmalade in instead of any sugar except the bit on the top. Lovely.

I was just wondering do people still eat Semolina, Tapioca, and Rice Pudding.

I had a tin of Ambrosia rice pudding the other day. I got it for the dog but forgot he didn't like rice so I ate it. Yum.

They still have tins of semolina and tapioca in the supermarkets.

My favourite was sago pudding. Not seen any in ages. :(

You bought rice pudding for the dog? What?

Sago? bleeeugggh!

The pudding I loved at school was an unfeasibly yellow sponge, spread with vermilion jam and coconut sprinkled on top.

Remember that one?:D

I do think you should cook the custard separately first. I'd definitely make this pudding in a bain marie as well, and if I had the time I'd do it in two stages: first a 'girder' stage with the bread dipped in the custard and cooked until crisp, and then the rest of the custard poured over this 'infrastructure' and cooked until just set. That way you get the crispness of the bread set against the smooth creaminess of the custard.

I accept that may be a bit of a faff tbf. :hmm:

aye - it were lovely. we had manchester tart - pastry case with sliced banana at the bottom, topped with jam, topped with custard. i seem to remember coconut on the top of that too...

Yup, definitely high in the faff charts, Orangesanlemons.
I keep things easy. I abandoned culinary niceties during my 'cooking daily for a family of five' period.

Are you sure? Sliced banana is non-standard in a Manchester tart. Very non-standard. Unheard of, in fact.

I think I liked it because it was dry.

See I loathe custard (don't hate me) and any slimy pudding.

The coconut sponge was a welcome relief.

The dog was only eating fatty foods as though he had a stomach upset and the fat was lining his stomach and settling it. Vet suggested only giving chicken and rice. I combined the 2. :)

You realise it's got milk in it? Dogs can't digest cows milk very well and it gives them an upset tummy.

Mine have never had a problem with dairy products and never had a stomach upset as a result. My other dog nicked a block of butter that was defrosting on the side, ate the lot no problems at all.

Chocolate doesn't upset dogs stomachs either.

Sago

Thank you Wouldbe I knew there was another really old pudding out there. Sago, sago. I have no idea what it looks like though. You can't see this in a supermarket. I am going to have a search for an image.
