Chinese braised pork belly:

1 inch cubes off bone. Pour boiling water over and simmer for a few minutes then drain and wash off scum.

Simmer cubes in stock/water for a couple of hours with loads of fresh ginger, star anise, soy sauce and rice wine vinegar. Once tender remove meat and reduce sauce if necessary. Serve with noodles and spring onions.
 
Picked up some very cheap 'smoked and cooked' pork belly from the #haggleshelf yesterday. Needs cooking tonight so am looking for inspiration :hmm:

Thinking fried (crispy) with some Soy sauce or similar...
