1 inch cubes off bone. Pour boiling water over and simmer for a few minutes then drain and wash off scum.
Simmer cubes in stock/water for a couple of hours with loads of fresh ginger, star anise, soy sauce and rice wine vinegar. Once tender remove meat and reduce sauce if necessary. Serve with noodles and spring onions.
