Crayfish have bacteria in their gut that is harmful to humans, as most people don't eat the guts of crayfish, it would be rare that any harm would come from not flushing them. Only in the case that one boils the scraps left over for stock would the bacteria come into play.
If you are fastidious like me though, you will put them into a big fish tank and feed them potato peels for a week before boiling them up for a meal.
If you're fussy, you can drive a knitting needle under the exo-skeleton into the brain, but dropping them in boiling water kills them in about 2 seconds.
Talking to a chef recentely, who reckons you can kill Lobsters succesfully by putting them in cold water, probably unsalted.
Never bothered to soak them in water, never done us any harm or do they taste of silt....the only thing we always do is take the poo pipe out
We cook them in a big ol tea urn and just tip them into the boiling water, cruel I don't know, depends who you listen to humane or barbaric according to different people...
A lot of people are squeamish about the boiling water because of the old mistake of thinking that the sound of air escaping from under the exo-skeleton is the crayfish/lobster/langoustine "screaming".
