Popped to Wautrose late yesterday. It is expensive #classtraitor but they do really mark down stuff properly #haggle

Got a load of chipolatas for 99p a pack so a fairly well set up. Might do a quick batch now but the rest are in the freezer.

Glaze is salted butter, smoked rum, muscavdo sugar and cinnamon.

Made a bit too much glaze so they are swimming in it a bit have cranked the oven up high might have to take out and empty out the tray.

Not bad. Cooked them for about 45 minutes (15 more from the above pic) and pretty good. Going to pierce the next so they infuse the glaze better.

No. That’s a prune wrapped in bacon. The seventies were weird.

If too much glaze surely reduce and use for dipping?

No. That’s a prune wrapped in bacon. The seventies were weird.

And angels on horseback were oysters wrapped in bacon I think.
I have not had them but would def give a go.

Got some more pigs in blankets on the go too. This glaze was soy and honey with a small bit of dijon mustard.

Not bad at all but prefer the sweeter glazes (with or without rum) so far.

Top tip: to help pigs in blankets keep their shape, flatten and stretch your streaky or back bacon with the back of a knife, so it thins out on the chopping board. Then do the wrapping, you'll find a much tighter bundle which keeps a good shape through the violent vicissitudes of the oven experience.

Also can't think pigs in blankets without hearing the Pigs in Space theme tune.

Pigs in blankets = sausages wrapped in bacon
Pigs in duvets = sausages wrapped in bacon wrapped in pastry
Pigs in sleeping bags = sausages wrapped top to toe in pastry, no bacon, but with zip access.
Pigs in slankets = sausages wrapped in bacon wrapped in pastry with sleeves
Pigs in Snoods = as above but with collar detail
Pigs in Shit = us on Xmas Day
