Pickling Onions

Put mine in jars yesterday. 3 1L jars in the end. Although i_hate_beckham is whining about their not being enough Chilli in the jar allocated to him, the cheeky bastard.
 
I've been shamed into action. I now have 3 big fuck-off jars of onions slowly pickling into sheer deliciousness. :) :cool:

I'm just salting shallots now to pickled with white balsamic tonight, and then I have another jar (only 1/5l though) with which to find something else to pickle :D

I did enjoy the pickled beetroot I did but also my dad adores pickled red cabbage so that might have to be done too :D

doggy doesn't agree with me though and loves a pickled egg in his pint

Is it really sad that I'm totally excited about this weekend cos I'm off to buy my shallots and vinegars. I've ordered my jars.

As an aside, I've just fallen in love with a new Nigella product I've not seen before and I've been buying back issues of Good Housekeeping :o

Well we do have a magazine stand in Derby that sells back issues in perfect condition with all the free gifts and everything for a quid. :D

Thing is that my house is a right tip, I'm all manky today and Flashman does most of the food in our gaff but cooking and stuff like that is in my blood. :)

I don't particularly like the new Nigella black range but I've not seen this before and I *must* have it.

What about preserving stuff in oil - any one got any ideas? I fancy doing some of those fancy antipasto mixes of roast peppers, aubergines, mushrooms, etc. Do I just grill them and chuck 'em in some oil?
 
ah I have some info in a book at home (for feta cheese n veg n stuff) will post when I get there :)
 
No idea about preserving in oil but I know that you shouldn't preserve garlic. It can give you a nasty dose of food poisoning which is a shame cos I quite fancy pickled garlic cloves.
 
My uncle used to make ( proberbly still does , dont see him any more family fued ) lovely olive oils infuseed with different stuff like , Things like herbs , chilli or garlic . were bang on . his sausages were the best thing he made though but thats another story .
 
did mine before i went away. Soaked em in cold brine overnight, put them in a big bowl, and pop a plate on top to keep them under water. next day, get your vinegar, boil it with some herbs in, (I used bay, and rosemary i think) sterilise yor jars, bung in your onions, and pour vinegar on top. Make sure that your onions DON'T touch the metal lid of yuor jar if it has one, or even better, don't use jars with a metal lid. I can't remember why, but it's important apparently, probably stops your legs falling off or something.
 
I am shallot-less :( The best I could find was a several kilo bag for 6 quid! I thought that was a bit pricey and so needed to think about it but actually it's not so bad. I did realise though that it's daft to peel your onions and have them ready when your jars haven't even arrived :rolleyes: so pickling up weekend is on hold until supplies arrive. Flashman has just discovered bottles of balsamic for 79p in the other Lidl after our fruitless search on Saturday.

That's not to say the weekend has been a complete blow out. I bought a 100 piece cookie cutter set from Lidl and some silicone bake ware which kick started a baking frenzy. 2 banana loaves and 2 carrot cakes later we were done. Lemon drizzle cake and Christmasy biccies tonight I think. I shall be the size of a row of terrace houses at this rate but the people at work are loving me more and more :D

Awww, they're really terrible. Too brightly coloured and too many seasonal shapes like pumpkins, shamrocks and Father Christmas. You wouldn't like them ;)

Flashy had gone to select beer and left me in charge of the trolley amongst baking goods. Fatal error :D

I need to learn to sew really so I can knock up a bag to put them all in.
 
Well as a slightly smug pat on the back to myself, I thought I'd revive this to say my pickled shallots were v yummy and went down well as Chrimbo pressies. How did everyone else's pickled delights turn out?
 
still eating them and they're lovely

though the shallots in white balsamic are a bit weird tbh :confused:
