this. although i will sometimes have scrambled for dinner if i am lacking suitable omlette fillings, or if i cock it up and it scrambles rather than cooks evenly

I've gone for scrambled eggs because it's just so easy. Whereas making an omelette, a proper omelette, not one of those southern efforts that look like a pizza is a real art.
I personally prefer scrambled by a nose. But other people have told me I cook an omlette (French style - thin and runny in the middle, not this Spanish omlette shite) better than I do scrambled.
