Blanch 'em for a few seconds,
Peel,
Slice,
Cover with honey and a liqueuer of some kind,
Refigerate,
Serve on the best vanilla ice cream you can afford about six hours later.
No nectarine can rival that
If you have a really ripe peach you can quarter it (the stone drops neatly out) and then simply peel the skin off..that is if you are so fussy you simply couldn't eat the skin.
