You could try making micheladas with them. Lime juice in the bottom of the glass, top up with beer and salt around the rim. Some versions have chile powder in, or even worcestershire sauce with the lime juice.

In the mountains near Toluca you can get blue tortillas with green chorizo and red salsa. It looks (and tastes) incredible.
Although that photo looks a little worrying if I'm honest. Sure it tastes aces, but it looks like someone's sneezed on a massive macrobiological culture. I half expect to see someone with a tete pipette over a petri dish.
