Matching wine to vegetarian dishes

I can only talk from experience; as I've said, I've never met a vegetarian whose palate I could trust. I proffered a suggestion that that may be because their palates aren't as well exercised, so less able to discern such a wide range of flavours. The ability to discern flavour is crucial to the appreciation of wine.

This implies that you think you are better than others because you eat meat, this is not the case. Being vegetarian does not in anyway stop a person being a gourmand.

Of course, when serving wine to vegetarians it is important to consider Chymaera's point that wine is not necessarily acceptably vegetarian.

and to recognise that it's largely a matter of taste, although there are some not-very-widely-agreed-upon-when-you-look-into-it principles that may help. And a lot of pompous fuckers who claim to know best.
