Making curry paste

It's probably worth pointing out that I haven't actually made a curry with this yet, either, so you might want to wait until I've used my family as guinea pigs to see if it's any good. I'm experimenting on them tonight. :D
 
OK, I'm making a curry with that paste just now and it's a bit sweet for my liking. Spicy enough but sweet isn't really what I think of as a curry taste. I've bunged a load of curry powder into the mix and all's well. But the paste definitely needs a bit of fine tuning.

But you said it smelled all nice and stuff... you haven't actually made the curry, little hooligan! the site you recommended does not provide help with conversion. :rolleyes:
 
Yeah, the paste smells great when you're cooking it. That's not the same as actually making a curry from it. :p :D

make should have made in my post, just corrected it. and i bet it smelled nice. well done for experimenting. once you hit the tip-top recepie, please come back and post it, ok?. and finally, are you trying to get a good paste for any meat, or for a specific one?
 
Just any meat, really. The curry I'm currently making is veggie. I think this paste will be OK if I bung in a couple more teaspoons of hot curry powder or some more cayenne pepper. Or just good old fresh chopped chilli. It just needs something to counteract the sweetness. I think I overdid the ground coriander.
