Making a Thai Curry

I do hate to add a note of controversy but am going to anyway - I find the fish sauce kinda rounds out and bolsters the other flavours but used a teaspoon of bouillon powder instead of a glug of fish sauce t'other day and Him Indoors quite liked it.

(he is a total wimp when it comes to thai tho :p)
 
Well that was a definite improvement.

Might try the bouillon next time I'm out of fish sauce though.
 
Hey, you can add bouillon as well as fish sauce. I pretty much always use stock as the base for a Thai curry - roughly half stock and coconut milk

Besides, now you've had fish sauce you'll never want a Thai dish without a good couple of glugs
 
It's been so long since I've made a Thai curry, i'm re-reading this thread to remind myself how to do it.

Any more advice and tips welcome.
 
I used to make lazy Thai curry quite a lot. To make enough for two greedy bastards, it was half a jar of paste and a whole can of coconut milk. Never bothered with fish sauce. I would brown some chicken in the paste and then add the coconut milk and veg and leave to simmer for at least 15-20 mins. Recommend adding a little tin of bamboo shoots, they are lovely and also water chestnuts.

Nowadays the hubbie has realised he shouldn't eat chillis, so my thai curries are the fancy ready meals for one from tesco or m&s. Even lazier!
 
Thai Curries are probably the easiest curry to make: unless you're some kind of moron.
 
Golden Mountain soy seasoning source is a good veggie source which can be used to replace shrimp or fish source in Thai food. It's quite easy to find - outside of supermarkets.

There are also pastes available which are veggie and don't have any fish in them.

Vegie red currry paste, coconut milk, veg and jasmine rice makes a quick and easy supper.

there's a difference between being pervy on yourself with obvious consent to doing it to others without their consent and sometimes knowledge tho
