Does anyone have a recipe for liquor? I have a scouser staying with me, he's going back to Liverpool tommorow and he really wants the recipe to take home with him.

Assuming you are in London liquor is the liquid left over from boiling eels.
 
No problem.

There are dozens of recipes for the stuff (most of them "secret" :rolleyes: ), but most involve making a roux, chucking in a load of parsley, salt, cream and a bit of vinegar.

Why anyone would want to eat a substance that smells of cats piss however, is beyond me!
 
Parsley Liquor
This is a recipe for the famous green gravy that is served with the East End speciality of 'Pie, Mash and Liquor'.
Ingredients

Serves: 4

25 Gram Butter (1 oz)
25 Gram Plain flour (1 oz)
300 ml Water (10 fl oz)
4 Tablespoon Chopped fresh parsley
Salt and freshly ground pepper
1 Teaspoon Malt vinegar, optional


Method

Melt the butter in a saucepan. Add the flour and cook for 1 minute.

Gradually add the water or stock. Bring to the boil, stirring continuously. Add the parsley and seasoning and vinegar if using.

Serve with a minced beef pie and mashed potatoes.

You can use chicken stock in place of the water

Anyone who comes up with a reply liquor is not the liquid from cooking eels is talking out of their arse. Pie and liquor is pie and gravy made from the liquid that is the result of boiling eels.

Liqour is sometimes (but not always) made using a stock from eels or fish with the addition of parsley, cornflour and vinegar - it is the parsley which gives it the bright green colour.

Eels in pie and mash shops are stewed in a parsley sauce as the recipe says. Many pie and mash shops use the left over liquor to put over pie and mash. Not so common now though.

I once had a memorable meal of pie, mash & liquor somewhere in London with Californian country singer Heather Myles. (long story)!

She loved it, I wasn't quite so sure - the liquor reminded me of snot..

(she's actually a very cool person & collector of Morris Travellers)!

Yuppie bollox? Cockneys have been eating pie mash and liquor (made with parsley btw, NOT gravy) since late Victorian times and maybe before. Hardly a yuppie thing to be honest...
