If I had seen king rollo before I went out (and you edited) I might have considered it, but only briefly, because rollo is, in fact, in this instance, correct.
 
Slice thin - ovenproof dish - mix a gravy with oxo cube or similar - tin of carrots (or fresh) - sprinkle herbs - cover with either thin potato slices or mash and bake in oven - blast heat to brown off.

Serve with crusty bread.....
 
A related question for this thread, how long can you keep left over roast lamb for in the fridge?

I've got a whole leg's worth still to eat which was cooked Sunday night, it tastes so amazing (marinated for 36 hours no less) that I'm loathe to stick it all in a curry/tagine/smother it with other stuff. So how long before it turns to the darkside?
