January craft club - marmalade and knitting

By my calculations there'll be about ten of us. I will consult my recipe books and try to calculate how many oranges we will need. How many jars should we aim to make?

Han - are you OK to order them from your greengrocer?

Will pop round to the shop this afternoon to see if he can get the special oranges and how much they will be.

I have been round to the shop and they have them in stock they cost 95p per kg.... So we need to work out how many oranges we need and who wants what :)
 
trying to find how much we ordered last time... (we won't need as much as that though - I still have some in my freezer from last year!)

eta: it was 6kg
 
in one of my cook mags there are 4 varieties of marmalade recipes if you want me to type them out (or tell you what mag when I find which one it was :o :D I suspect it was this months GoodFood :)) one of them was seville orange and ginger, that just sounds fantastic :cool:
 
I've done a quick search and can't find them, it may be cos its this months :)

anyway there is:

clementine & cointreau
passion fruit & seville orange
ginger & seville orange

they sound :cool: x
 
ooh.. the passion fruit one sounds nice :)

passion fruit & orange:

do same as for seville marmalade (4 oranges (about 500g fruit) scrubbed, 1.7l water and 1kg sugar

increase sugar by 100g and add juice of 6-7 large ripe passionfruit (about 200ml pulp)

will take 2-3 mins longer to reach setting point :)

i like the idea of ginger and seville (just seems easier than trying to find passion fruit!).

i'm up for as many jars as i can take - like last time. i have no problem getting rid of this stuff - makes great presents.

I have muslin (remember last time?? :eek: ) and probably about 50 jars! :D
 
the ginger one says add 85g peeled finely grated ginger to the muslin bag

then add 4 chopped balls of preserved ginger to the marmalade and leave to stand :) then jar
 
:D that was my thought too :D

normally I'm not that fussed about marmalade but I think I might give this a go :D

ooh.. and surely the addition of "cleansing" ginger would make marmalade a january friendly detox food (if we ignore the sugar.. :D )
 
the method of their marmalade seems unnecesarily complex so maybe just adapt them as needed :)

*breaths sigh of relief she doesn't have to type the whole thing out :D*

She wants me to tell you that she would also like to make some plain normal un-gingery marmalade as well if peeps are ok with that! :)
 
If I'm not too late I'm still up for marmalading. I'd only like 5 jars though... anything more than that becomes a hassle for me. I'd like a gingery and an un-gingery version too. The passionfruit one sounds good. What if we found some frozen passionfruit pulp? I could look online at the big supers and see if that's something they'd stock - I've only ever bought it in Oz. If anyone else thinks the passionfruit sounds appealing? YAY - I will be glad to actually be part of the jam making process of the jam social occasion this time, having made an early exit in Kent! :)
 
Excellent news!!! Well for me anyway - the thing I was meant to be doing has been postponed, so I'll be able to make this after all.
 
Wry - I don't think we'll be making quite as many jars of marmalade as we did of jam!

The recipe in Good Food recommends that you only make double quantities, because otherwise there's a risk of it boiling over! :eek: Anyway, a double quantity only makes 6 1 pound jars of marmalade, which would barely be one pot each. So how about making a batch of ordinary marmalade, a batch of Oxford marmalade (darker marmalade) and a batch of Orange and ginger. That would be 18 1 pound jars (more if the jars are smaller, obviously).

I guess we could make more if anyone has a preserving pan (Ruby?).

What does everyone think?

(Jan - by my calculations we'd need about 3kg of oranges)

I don't quite know how I made that one. It just sort of happened. ('Twas the first and only time I've made marmalade) :D

Actually, that recipe is a lot simpler than some of the other ones - no muslin bags etc. Did you do the muslin thing last time?
 
Yep, I can bring my preserving pan. I quite want to do my Granny's recipe - but I'll probably do a whole batch at home at some point for that. In fact if Blue Nun could get me the oranges that'd help, otherwise I'll have to trek all over the place for them.
