I wouldn't say he's rubbish...I can't say I like all his recipes, but most of the ones I've tried have turned out pretty well. In particular the American pancakes.
Like some people have said, his recipes (and well, I guess most recipes) are best when adapted. I use his Spag Bog recipe as a base for a ragu cannelloni which is awesome . So tasty.
Not so keen on his more recent programmes/cookbooks if I'm honest. He's gone more 'homely dad'/Hugh Fearnley-Whittingstall if you ask me.
Don't get me started on Heston Blumenthal *_* the guy drives me up the wall. Who in their right mind would use scientific equipment to cook with?! Cooking's an art, not a science or at least, that's how it should be.
Nonsense! It's not about te hotness of pans, it's about the recipes!
In his meatballs recipe he puts RAW onion into the meatballs, and then cooks them for 15 minutes in the tomato sauce.
The result? Barley cooked beef with raw onion in it. Cook it for longer? Cookedbeef with raw onion in it.
Disgusting!
My mum taught me at 5 that you NEVER put raw onions into a meatball mixture, always sweated ones. It brings out the sweetness of the meat and doesnt leave you with a bitter tast in the mouth.
