Jambalaya appreciation thread!

I have never made it before, but I bought a cookbook today with a chicken and prawn jambalaya recipe, hopefully will make it soon.
 
What's the difference between this and paella then?
They're very similar dishes and there are dishes that are practically identical to Jambalaya that I've seen called Louisiana Paella.

I'd probably say the seasoning is the major difference, Jambalaya is a bit spicy while Paella isn't (altho I've had spicy Paella before). The spices I'd use in Paella are pretty much limitted to paprika and saffron

Paella is also made from a different short grained rice whereas Jambalaya is made with American long grain rice

Also in my Paella recipe I'd swap celery for peas and green for red peppers (I'd still have chicken, chorizo and definitely king prawns in my Paella)

I forgot to get any chicken stock so did a DIY version with a bit of breast and a veggie stock cube. Shouldn't make too much difference, should it?

Doubt it, I used to make it with veg stock myself when I didn't have chicken stock. It's mainly the spices that give it the flavour rather than the stock
 
I was out of bell peppers so I went with some pickled chillies instead. They seem to have worked well, too.
 
Just had some of this for supper. Its one of the best ready-made supermarket meals I've ever had. :)
