Im doing a mexican night and i need some advice!!

125ml lime juice (bottled is fine, tesco finest one is good)
30ml tequila
45ml cointreau or triple sec (I use triple sec because you get get a bottle for about 6 quid)
150g icing sugar
500ml double cream

Serves 6

Pour lime and booze into a bowl and stir in the sugar. Add the cream and softly whip until thick and smooth but not stiff. Freeze in airtight container overnight (or the morning of the party is fine).

You can grate a bit of lime zest on the top for decoration if you want. It's in margarita glasses with salted rim in the picture which would be good for dinner parties.

no ice cream maker needed ?-as ive just reserved one on argos website?:D
 
On a baking tray make a layer of nachos/tortilla chips (about 1/2 inch thick).
On that, fat layer of refried beans. On that, layer of salsa. Finish off with a layer of cheese. Toast in oven until cheese bubbles/browns. Serve with more salsa on side, fresh salad, lashings of guacamole and sour cream!
Yum.
